Beef shin (osso bucco)

Cut across the bone in the ‘osso bucco’ style.

Cut to expose the bone, which allows the marrow to add lip-smacking flavour to the dish as it cooks, beef shin wants slow cooking. It can be served as whole pieces, or, the meat and it’s rich sauce can be tossed through wide ribbons of egg pasta. Traditionally the veal version is served atop of saffron risotto with parsley and lemon zest gremolata.

Feeds 2 in the osso bucco style or more as a sauce for pasta or gnocchi.

We delivery nationwide next day (cut off 11am) Tuesday-Friday. As the courier doesn’t deliver for us at weekends, any order placed after 11am on Thursday and before 11am on Monday will be delivered on the following Tuesday.

Storage

Your meat will arrive frozen inside a recycled cardboard box with insulation and ice packs.

You can pop it straight into the freezer or defrost and cook it within 3 days.
